16-Jaehriges Bandmitglied und Komponist

Susanne Nielsen interviewt Lukas Kulemeier

Lukas Kulemeier mit neuer CD -The Next Life

Sein Kollege A.K.

Baking Gluten-Free Bread in the European Tradition

Our bakers are situated in a pristine nature preserve in the Fichtelgebirge in Bavaria, Germany. Pema was established over 100 years ago as a small cake shop. Over the years, they expanded into bread making, using only the finest and purest ingredients, and have been baking whole grain and all-natural breads for much of that time. Their ‘regular’ line of breads are made from organic ingredients, as established by the European BCS De-001-Oko Kontrollstelle.
The gluten-free bread line is baked in a separate building to avoid contamination and ensure the gluten-free purity. The primary ingredient in the gluten-free breads is rice. Once the rice used in the gluten-free varieties is delivered, it is thoroughly cleaned using equipment with a much higher degree of efficiency than usual. This is followed by an intensive washing process to remove dirt and other pollutants.
Next, the grain is biologically activated by soaking in warm water, i.e. the life processes are activated, rather like in the development of shoots. However, grinding takes place before the active substances are actually used up by germination. Soaking also has the advantage that the husk and starch are especially intensively swollen, increasing the digestibility of the bread and allowing it to be kept for much longer. Whereas other manufacturers only allow an hour for the preparation of dough, our grain is soaked for between 24 and 48 hours.
The rice is ground immediately before dough preparation, which takes place without the use of any additives whatsoever. The ingredients vary slightly from variety to variety (see each bread description page for details), but the basic ingredients are simply the grain (rice for the gluten-free varieties), mountain spring water and salt. The bread is baked in special ovens developed by the bakers that allow the bread to bake at very low temperatures (on average 145 degrees Celsius) for as long as possible. This long, low temperature baking contributes significantly to digestibility. At the same time, malting and fermentation processes take place, which improves the taste. Baking the bread twice as long as conventional recipes also means it stays fresher for much longer.
The bread is allowed to mature for 24 hours – and only then is it sliced and packaged. The special packaging process, also developed by the bakers, uses gentle pasteurization, allowing the bread to stay fresh for a very long time without the need for artificial preservatives. In addition, the bread is double wrapped for extra protection against outside contamination so it reaches you, the consumer, in tip top condition.
